Mock Noodles Chicken Romanoff Casserole

1 6 oz.package broad size noodles

1 cup cottage cheese

1 cup sour cream

About 2 cups boneless,diced chicken

1 tsp.minced onion

1 sm.clove of garlic minced

2 tsps.Italion seasoning(other seasoning may be substituted)

1/2 tsp.salt

1 tsp.worcestershire sauce

1/4 cup grated cheese

Method:

Cook noodles in boiling salted water.Drain.Combine with diced boneless chicken,cottage cheese and sour cream.Add seasonings and mix well.Place in greased 8 by 12 Casserole dish.Sprinkle with cheese.

Bake at 375*for 1 hour.After that,test with meat thermometer that chicken has reached a temperature of 180 degrees.

Puffy Egg Casserole

2 Tblsp.butter

4 slices bread

1 cup milk

salt and pepper to taste

1 cup grated cheese

4 eggs separated

Method:Spread butter on bread cut in one inch squares.Combine bread,milk,salt,pepper,and cheese in bowl.Beat egg yolks until lemon colored.Stir into cheese mixture.Turn into 9 inch square pan.Bake in 350*oven for 30 to 35 minutes.

Macaroni and Cheese Casserole

1 cup macaroni

4 cups of boiling water

1 tsp.salt

Method:Cook macaroni in large pot until tender.

Meanwhile,make cheese sauce as follows:

2Tblsps.butter

4 Tblsp.flour

2 tsps salt

1 tsp.pepper

2cups milk

1 cup grated cheese

top with 2/3 cup

buttered crumbs

Bake at 375* until crumbs turn brown.

Meatloaf and Potatoes with tangy topping

3/4 pound ground beef

1/4 pound ground pork

1 egg

6 medium sized potatoes,sliced in half

1 cup milk,diluted

1 cup tomato juice

1/2 cup rolled oats

2 tsp.finely chopped onion

1 tsp.salt,1 tsp.pepper

1 tsp.prepared mustard

Method:Combine meats.Beat egg with liquid and add to meat along with remaining ingredients.Mix well.Pack lightly in casserole dish.Spoon prepared tangy Meatloaf Topping on meat.(recipe below)Cover with greased paper.

Arrange potatoes in one corner of casserole dish.Sprinkle potatoes with available seasoning.Bake at 375*for one hour and 15 minutes.

Tangy Meatloaf Topping:

1 can tomato sauce

1/4 cup corn syrup

1 tsp. vinegar

1 tsp.finely chopped onion

2 tsp.worchestire sauce

Bring to a boil in saucepan,simmer 5 minutes,until slightly thickened.

Chicken Chow Mein

1 cup drained bean sprouts

1 can mushrooms with stems and pieces

2 Tablespoons onion flakes,or chopped onion

1 chicken oxo cube

1/4 cup water

1 tsp.garlic powder

1 tsp.soya sauce

chopped celery and green pepper(as much,or little as you want)

6 oz(roughly almost a cup)

Method:Combine all ingredients except chicken.Simmer 5 minutes.Add chicken,heat and serve.

Ice Box Cookies

1 pound of butter or shortening(approximately almost 250 ml)or 1 cup

1 cup white sugar

1 cup brown sugar

6 cups flour

1 tsp.soda

4 eggs

1 cup blanched almonds

Method:Mix,roll into bars.Place in refrigerator over night.Slice them,and cook.This recipe will make a large quantity.Freeze in large freezer bags if desired.Good for 4 months in freezer.

Lemon Cheese Cake

8 oz.pkg.cream cheese

2 cups milk

1 pkg.lemon jello instant pudding powder

9 inch graham wafer pie shell

Method:Soften cheese with a fork.Add 1/2 cup milk and blend until smooth.Add remaining 11/2

cup milk and pudding mix.Beat slowly with egg beater for one minute.Pour into pie shell and set for 1 hour.
